Rotelle Pasta, Sugar Snap Peas and Tomatoes

Lent season is here and that means that millions of Christians around the world just became instant vegetarians. Well, at least until Easter Sunday. Every year around this time, Christians enter into a period of reflection and prayer. Additionally, they also choose to give up something near and dear to help them better understand the sacrifice of the cross. Most choose to give up meat. I, on the other hand, have decided to remain a carnivore and give up juice instead. Sounds minor? Not for me! I am a juice addict. What makes my challenge worse, is the fact that I have decided to substitute it with water. Shoot me now! Water and I have a love-hate relationship. Yes, I know it is good for me and on some days I can put away a gallon. However, I can also go weeks without it and not shed a tear.
My husband tries his best to get me to drink water, but I always seem to find a way to weasel myself out of it. With that said, can you imagine what the next few weeks of no juice will be like for me? Jesus, please take the wheel! On a lighter note, I made this awesome pasta dish for Wednesday night’s dinner. I guess you can say it was my comfort food for the inhumane regulations I placed on myself. I am a major fan of Sugar Snap Peas so, I decided to whip up a batch and throw it into some pasta. I sautéed my sugar snaps in garlic soy sauce, olive oil, garlic salt and added in some sesame seeds. YUM! All of the seasoning that I added to the sugar snaps were soaked in by the pasta, which made for a delicious and refreshing dish.

When all was said and done, I delved into my meal and enjoyed a nice relaxing dinner with a glass of waterOy vey! This is going to be a long several weeks

Below is my recipe to this awesome pasta dish. Let me know if you try it.
3 – 4 cups of Rotelle pasta {spiral pasta}
2 cups of Sugar Snap Peas
2 cups of Cherry Tomatoes, chopped
6 tablespoons of Olive Oil
1 tablespoon of Garlic Soy Sauce
1/2 tablespoon of Sesame Seeds
1 teaspoon of Garlic Salt
Prepare Rotelle pasta as per instructions on the package. Set aside.
In a wok, add olive oil and let it heat up until it begins to bubble. Add in the sugar snap peas and stir until they are completely coated in the oil. Let cook for 2 minutes over medium-high heat.
Add in garlic soy sauce and sauté for 1 minute.
Add in sesame seeds, garlic salt and tomatoes and stir. Let cook for 5 minutes, covered.
Add in Pasta and stir for an additional minute.
Remove from heat and serve.
