Tender Turkey Necks

I woke up yesterday morning feeling horrible. It has been really cold here in NYC. The night before as I commuted home, I literally froze my butt off. That morning I was so busy rushing out the door, that I forgot my scarf. My negligence caught up with me. I broke out in sweats and could not keep myself up. It was so bad, I had to call out of my day job. I crawled back into bed and was out like a light. After hours of sleep and medication, I finally found the energy to get up and whip something up.

On Saturday, while shopping for groceries, I picked up a package of turkey necks. Turkey necks are one of my all time favorite dishes. My mom always made them for me as a treat. Her turkey necks are always so tender that the meat falls right off the bone. YUM! 
In honor of great childhood memories and my mouth salivating over just the thought of mama’s turkey necks, I decided to treat my family. I am so happy I did. Those necks were really good.
Below is my recipe to tender turkey necks.
5-6 pieces of Turkey Necks {about 1-2 pounds)
5 tablespoons of Olive Oil
2 tablespoons of Tomato Paste
1 cup of Celery, chopped
1 cup of Parsnips, sliced
1. Preheat Oven to 400 degrees
2. Marinate Turkey Necks and place in fridge for 15 minutes
3. In a wok, add oil and tomato paste over medium heat. Stir.
4. Add in Turkey Necks and brown for 10 minutes {5 minutes per side}
5. Remove from wok and onto baking dish.
6. In same wok, add in celery and parsnips. Saute for 5 minutes.
7. Place dish into the oven for 1 1/2 hours. After an hour, flip turkey necks and add in sauteed parsnips and celery. Bake for remaining 1/2 hour or until tender.
8. Remove from heat and serve.
Serve over steamed rice.
