Hey foodies! I know it’s been a while, but we’ve been living through a heatwave. If you’ve ever been to NYC, you know that our heatwaves are scorching hot. I mean if hell is anything like this {and I’ve heard it’s hotter} I definitely don’t want to go.
Because I am not a fan of extreme heat, I have been avoiding the kitchen at all cost. I mean all I want to do is stand in front of the AC all day. The sad part is that we have 3 more days of this. Oh Lord, help me! On a lighter note, I received an awesome package of mushrooms from today. This time the Portabella’s were HUGE! I decided to use one of the Portabella mushrooms to create a unique Mango and Mushroom salsa.
I am a big fan of sweet and savory blends so you will find many recipes where I incorporate fruits. This particular blend was a new one for my repertoire and I am happy I decided to experiment. Mangoes and Portabella Mushrooms are just meant to be. Just trust me! {Hey, that rhymed! Yeah I know. That was lame.} I paired the salsa with some specialty pasta I picked up at HomeGoods. Who knew that pasta with mangoes, mushrooms and some fresh herbs would be so tasty? Well, now I know.
3 cups of Portabella Mushrooms, sliced
2 cups of Mexican mangoes, chopped
1 cup of chopped parsley
1 tablespoon of red pepper flakes
1 tablespoon of Mango Chutney
3 tablespoons of Olive Oil
1 tablespoon of mint leaves, chopped
In a Wok/Pot, add olive oil, red pepper flakes and mango chutney. Once oil has heated up, add mushrooms and saute for 3 minutes. Add mangoes and saute for an additional 5 minutes. Add in Parsley and mint and saute for 1 minute.
Remove from heat.
