I recently received a lovely package from Eat.Write.Retreat, a food conference being held in Philadelphia, PA at the end of the month. There were so many cool goodies in this package including an exciting culinary challenge.
The challenge was to create an appetizer using…ready for it? California Ripe Olives! OH NO! I don’t like olives and my husband shares the same sentiment. I mean really, OLIVES?
Well, everyone knows I love a good challenge and being that this is my very first culinary challenge, I am going to put my preferences aside and work with my special ingredient. While planning tonight’s dinner, I thought of an unlikely idea. I grew up seeing my mama cook up some great “Boulettes de Viande” or meatballs. I decided to recreate her boulettes with an added twist. I was going to crust them with sesame seeds and then add a mild Guava glaze.
So how did they turn out?
Can you say AWESOME? They were much better than I expected. I mean I just thought up the recipe and dived right in. The nuttiness of the sesame seeds, the savory ground turkey meat and guava glaze just did it for me. All of that flavor just worked so well together.
Amazingly enough, my husband and I could taste the olives but we weren’t turned off by them. Could it be that I will be adding California Ripe Olives to my pantry? Maybe!
My husband and I now know that olives aren’t really as bad as we thought they were – well yes, we’ve had some bad olives. However, now we know that they can be a great addition to our recipes. They are versatile and seem to work really well in meatballs or as I like to call them Boulettes. Can’t wait to see what my other colleagues come up with!

1 package of Shadybrook Farms Ground Turkey Family Pack
2 eggs, beaten
2 cups of sesame seeds
1 cup of Italian Parsley, chopped
1 6oz can of California Ripe Olives, chopped
1 cup of shaved parmesan cheese
1 tablespoon of minced garlic
1 teaspoon of crushed red peppers
1 teaspoon of ground ginger
1 teaspoon of pasta herb spice
2 cups of vegetable oil
1/2 cup of chopped scallions
1 teaspoon of cayenne pepper
1 tablespoon of kosher salt
In a bowl, add ground turkey, 1 cup of chopped parsley, 1 teaspoon of cayenne,1 tablespoon of salt, 3/4 of beaten eggs, chopped olives, 1 cup of shaved parmesan, 1 tablespoon of minced garlic, 1 teaspoon of crushed red pepper flakes, 1 teaspoon of pasta herb spice and 1 teaspoon of ground ginger. Mix it together until all ingredients are properly distributed.
Place parchment paper on a tray. Use mixture to make medium-sized meatballs. Roll in egg mix then roll in sesame seed. Repeat till entire meat mixture has been utilized.
Place 2 cups of vegetable oil in a deep pot. Set heat to medium and wait till oils pops. Add meatballs and let cook for 7 minutes. Repeat until all boulettes have been cooked. Remove from oil and place on a paper towel to absorb extra oil. In a baking dish, add 2 tablespoons of Oxygen Amazon Guava Sauce. Place boulettes in dish and cover with an additional 2 tablespoons of guava sauce. Garnish with chopped scallions.
