Ginger Chicken Stir-Fry

Last night’s dinner was a new one for me. I had some fresh ginger in the fridge and I wanted to use it in a recipe.  I decided to pair it up with some chicken, leeks, scallions and bell peppers. When all was said and done, it was a tasty and spicy powerhouse meal.

Growing up, my parents were big fans of Ginger. There was always a piece of Ginger somewhere in the house and oddly enough I didn’t really like it much. My mom would make ginger tea and I would try my best to get out of drinking it. That scratchy feeling in my throat and the instant rise of my temperature made ginger my Kryptonite. At least that is what I thought. Now it appears to be a great cooking ingredient that I find myself using more often than expected.

This ginger chicken stir-fry is a great dish for those who like ginger and exotic spices. If ginger isn’t quite your thing, you can eliminate the ginger altogether and enjoy an awesome stir fry. However, the ginger really adds a nice zing to the meal. I can’t believe I’m actually vouching for ginger. I’ve included my recipe below. Let me know how your meal turns out.
2 tablespoons of fresh ginger, grated
2 tablespoons of powdered ginger
1 lb. chicken stir fry
2 cups of red baby bell peppers, sliced
2 cups of leeks, chopped
1 cup of scallions, chopped
2 tablespoons of Dijon mustard
1 tablespoon of ketchup
4 tablespoons of Vegetable oil
1 tablespoon of fresh dill leaves, chopped
3 garlic cloves, chopped
1 tablespoon of Worcestershire sauce
In a wok, add 4 tablespoons of vegetable oil, 2 tablespoons of dijon mustard, 1 tablespoon of ketchup, 3 chopped garlic cloves, 1 tablespoon of chopped dill leaves, 1 tablespoon of fresh grated ginger and 1 tablespoon of powdered ginger. Spread mixture and add stir fry chicken pieces. Let cook 5 minutes on each side. Add 1 tablespoon of Worcestershire sauce and stir. Let cook for an additional 5 minutes.
Add 2 cups of leeks, 2 cups of sliced red bell peppers and 1 cup of chopped scallions. Stir and let cook for 5 minutes. Add 1 tablespoon of grated fresh ginger and 1 tablespoon of powdered ginger. Stir, lower heat and let cook for 10 minutes.
Remove from heat
