Roasted Vegetable Medley

Tonight’s dinner was Garlic Steak Strips with a side of Roasted Vegetable Medley. Since my hubby and I started the no pasta or rice diet, I have become quite the risk taker. I find myself experimenting with all kinds of vegetables and so far its been good. I created my own medley of vegetables and roasted them for about 35 minutes and it turned out to be my best vegetable dish. I definitely with be making this medley more often than not. It is a great way to get your family to love vegetables and if you’re a vegetarian, it is delish!
I started out by collecting my ingredients and chopping them all up into a bowl. I then added some olive oil, kosher salt, ground black pepper, cayenne pepper and fresh dill. I tossed the vegetables with my hands to ensure all of the vegetables were properly coated. Then, I added them to an aluminum pan and into a 400 degree oven they went for 35 minutes.

When the timer went off, the most tasty dish came out. Honestly, I could’ve just had this medley without the steak, but together it was an explosion of flavors. {Stay tuned for the recipe to my Garlic Steak Strips!} My husband and I really enjoyed these vegetables and I am sure you will too.

Recipe:
2 cups of chopped Asparagus {2 inch cuts}
2 cups of sliced Onions
2 cups of chopped Bell Peppers {red, yellow and orange}
1 cup of cubed Acorn Squash
1 1/2 cup of sliced cucumbers {round circles}
1 cup of sliced Bella Mushrooms
1 cup of chopped string beans {1 inch pieces}
1 cup of chopped leeks
Olive Oil
Fresh Dill
Ground Black Pepper
Cayenne Pepper
Kosher Salt
Instructions:
Preheat oven to 400 degrees
In a large bowl, combine all of the ingredients. Add 2 tablespoons of Olive Oil, 1 tablespoon of Black Pepper, 1 tablespoon of Kosher salt, 1 teaspoon of Cayenne Pepper and 1/3 cup of fresh dill.
Blend Mixture by hand to ensure that all vegetables are properly coated.
Pour vegetables into an aluminum pan and place it into the oven. After 20 minutes, stir vegetables then let cook for the remaining 15 minutes.
Remove from heat
